Wild Rice and Mushroom Soup is a light yet filling soup made with earthy cremini mushrooms, tender vegetables, herbs, vegetable broth, evaporated milk, and cooked wild rice. A little butter and olive oil add richness, while thyme and sage bring savory flavor to this comforting soup.

Ingredients

Scale
  • 2 tablespoons salted butter
  • 1 tablespoon olive oil
  • 8 ounces cremini mushrooms, sliced
  • 1 medium yellow onion, diced
  • 2 medium carrots, diced
  • 2 ribs celery, diced
  • 4 cloves garlic, minced
  • 1 teaspoon fresh thyme
  • 1/2 teaspoon fresh sage
  • Coarse kosher salt and freshly ground black pepper, to taste
  • 3 tablespoons all-purpose flour
  • 1 bay leaf
  • 5 cups vegetable broth
  • 1 cup evaporated milk
  • 1 1/2 cups cooked wild rice

Instructions

  1. Sauté the mushrooms: Melt the butter with the olive oil over medium heat in a large pot or Dutch oven. Add the sliced mushrooms and cook, stirring frequently, for 5 minutes.
  2. Cook the vegetables: Add the onion, carrots, and celery. Cook, stirring frequently, for 15 minutes or until the vegetables are soft and beginning to turn golden brown.
  3. Add the seasonings: Stir in the garlic, thyme, sage, salt, and black pepper. Cook for 30 seconds.
  4. Add the flour: Sprinkle in the flour and cook, stirring, for 1 minute.
  5. Simmer the soup: Add the bay leaf and vegetable broth, stirring to combine. Bring to a boil, then reduce the heat and simmer for 20 minutes, stirring occasionally.
  6. Add the milk and rice: Stir in the evaporated milk and cooked wild rice. Let the soup simmer for another 10–15 minutes, until everything is heated through.
  7. Serve: Remove the bay leaf and serve warm with crusty bread or oyster crackers.
