Ingredients
Scale
1 cup unsalted butter, room temperature
Pinch of kosher salt
8 small strawberries, stems removed, chopped
1/4 cup honey
Instructions
In a medium bowl, crush the strawberries using a potato masher until you have about 1/2 cup. Set aside.
Place the room-temperature butter and salt in the bowl of a food processor. Pulse a few times until the butter is fluffy, scraping down the sides if necessary.
Add the mashed strawberries and pulse several more times until incorporated.
Add the honey and pulse until everything is combined and the mixture is light and fluffy.
Use immediately, or transfer to an airtight container and refrigerate until needed. Bring to room temperature before serving.
Notes
Salted butter can be used instead of unsalted butter. If using salted butter, omit the additional pinch of salt and adjust to taste.
If you do not have a food processor, use a bowl and a handheld mixer, following the same steps.
To make a smaller batch, halve all the ingredients.
For short-term storage, the original recipe suggests leaving the butter on the counter if it will be eaten within a couple of days. For food safety, refrigerate this fresh-fruit butter promptly in an airtight container instead.
Store in an airtight container in the refrigerator for up to 1 week. Bring to room temperature before serving.
To freeze, store for up to 2 months. Thaw overnight in the refrigerator, then allow it to soften before serving.
