Ingredients

Scale
  • 2 cups all-purpose flour
  • ½ cup granulated sugar
  • 1 tablespoon matcha powder
  • 2 teaspoons baking powder
  • Pinch of salt
  • 1 egg
  • 1 cup reduced-fat milk
  • 2 ripe bananas, mashed
  • ¼ cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • ¼ cup sweetened coconut flakes

Instructions

  1. Preheat the Oven: Preheat the oven to 375°F.
  2. Prepare the Muffin Pan: Line a muffin pan with non-stick cupcake liners.
  3. Mix the Dry Ingredients: In a large bowl, whisk together the flour, baking powder, matcha powder, salt, and sugar.
  4. Mix the Wet Ingredients: In a second bowl, blend the mashed bananas, melted coconut oil, vanilla extract, egg, and milk.
  5. Combine the Mixtures: Make a well in the center of the dry ingredients and add the wet mixture.
  6. Mix the Batter: Stir with a wooden spoon until combined.
  7. Fill the Muffin Cups: Spoon the batter into the prepared muffin tins and sprinkle the sweetened coconut flakes on top.
  8. Bake: Bake for approximately 20 minutes.
  9. Check for Doneness: Insert a toothpick into the center of one of the middle muffins. If it comes out clean, the muffins are done. If not, bake for another couple of minutes.
  10. Cool: Set the muffins aside to cool.

Notes

  • Use very ripe bananas for the best banana flavor.
  • Check the muffins with a toothpick near the end of the baking time. If it does not come out clean, return them to the oven for another couple of minutes.
  • Allow the muffins to cool before serving.
