Ingredients

Scale

Hamburger Steaks

  • 1.3 pounds ground beef
  • 4 tbsp breadcrumbs
  • 1 yellow onion – grated
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp heavy cream
  • 1 egg

Creamy Dill Sauce

  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 1 yellow onion – diced
  • 2 garlic cloves – minced
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp all-purpose flour
  • ½ cup low sodium chicken broth
  • 1 cup heavy cream
  • 2 tbsp chopped dill – more for serving

Instructions

  1. Grate the onion into a large bowl. Add the ground beef, breadcrumbs, salt, pepper, heavy cream, and egg. Mix with your hands until just combined. Divide the mixture into 4 portions and shape each into a ball. Press each ball down with the palm of your hand or a spatula until about ¾ inch/2 cm thick. Set aside.
  2. Finely chop the onion, mince the garlic, and chop the dill.
  3. Heat the olive oil and butter over medium heat in a large nonstick skillet. Add the hamburger steaks and cook for 4–5 minutes per side. Transfer to a clean plate.
  4. Add the garlic and diced onion to the skillet, reduce the heat to low, and cook until fragrant, about 2 minutes.
  5. Add the salt, pepper, and flour. Stir until incorporated. Pour in the chicken broth and simmer for 2 minutes, scraping up the browned bits from the bottom of the skillet with a wooden spoon.
  6. Add the heavy cream and dill. Bring to a boil, then simmer for 1–2 minutes until the sauce starts to thicken.
  7. Return the hamburger steaks to the skillet and simmer for 5–6 minutes, until heated through and fully cooked in the center.
  8. Finish with extra chopped dill and freshly grated black pepper. Serve warm.

Notes

  • Mix the ground beef ingredients just until combined to help keep the patties tender.
  • Scrape the browned bits from the skillet when adding the broth to incorporate their flavor into the sauce.
  • Allow the sauce to simmer briefly after adding the cream and dill so it can begin to thicken.
  • Serve with mashed potatoes for a satisfying comfort-food dinner.
