Ingredients

Scale

For the Peach Filling

  • 6 cups fresh or canned peaches, sliced
  • ½ cup granulated sugar
  • 2 tbsp brown sugar
  • 2 tbsp all-purpose flour
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice
  • 2 tbsp unsalted butter, cut into small pieces

For the Cobbler Topping

  • 1 ½ cups all-purpose flour
  • ¼ cup granulated sugar
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • ½ tsp ground cinnamon
  • 6 tbsp cold unsalted butter, cubed
  • ½ cup milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a 9-inch baking dish.
  2. In a large bowl, combine the peaches, granulated sugar, brown sugar, flour, cinnamon, nutmeg, vanilla, and lemon juice. Toss until the peaches are evenly coated.
  3. Transfer the peach mixture to the prepared baking dish and dot the top with butter.
  4. To make the topping, whisk together the flour, sugar, baking powder, salt, and cinnamon in a bowl.
  5. Add the cold butter and cut it into the flour mixture with a pastry cutter or your fingertips until it resembles coarse crumbs.
  6. Stir in the milk and vanilla just until a soft dough forms. Avoid overmixing.
  7. Drop spoonfuls of the topping over the peaches, leaving a few small gaps for the fruit to bubble through.
  8. Bake for 40–45 minutes, or until the peaches are bubbling and the topping is golden brown.
  9. Let the cobbler cool for 10–15 minutes before serving. Enjoy warm with vanilla ice cream or whipped cream.

Notes

Use fresh or canned peaches as listed in the recipe. Avoid overmixing the cobbler topping so it stays tender. Let the cobbler cool for 10–15 minutes before serving.
