This quick and easy cottage cheese flatbread combines the creaminess of cottage cheese with the crispiness of a flatbread. Perfect for a snack or a light meal.

Ingredients

Scale
  • 1 Cup Cottage cheese
  • 1 Cup All-purpose flour
  • 1 Large Egg
  • 1 Tsp Baking powder
  • 1/2 Tsp Salt
  • 2 Tbsps Olive oil

Instructions

  1. Start the Dough: Add cottage cheese, flour, an egg, baking powder, and a little salt to a mixing bowl.
  2. Bring It Together Gently: Mix everything until it forms a soft, slightly sticky dough that is workable.
  3. Let the Dough Relax: Cover the bowl and let the dough rest for 5–10 minutes so it softens and becomes easier to handle.
  4. Divide Into Portions: Cut the dough into small, palm-sized pieces so each flatbread cooks evenly.
  5. Shape Each Piece: Flatten each portion into a rough circle.
  6. Heat the Skillet: Warm a skillet over medium heat and brush or drizzle a little oil to prepare for toasting.
  7. Cook Each Flatbread: Lay one piece at a time onto the skillet, cooking for 2–3 minutes per side until it browns, puffs slightly, and smells toasty.
  8. Stack and Soften: When they’re done, stack the flatbreads under a towel so the steam keeps them warm and pillowy.
  9. Ready to Serve: Serve with curries, soups, or as a quick snack with cheese or hummus.

Notes

  • If you want extra flavor, brush the flatbreads with olive oil and sprinkle sea salt or za’atar right after they come off the heat.
