This Copycat Panera Bread Broccoli Cheddar Soup recreates the creamy, cheesy favorite at home. Made with broccoli, julienned carrots, cheddar cheese, and a smooth broth, it is a comforting soup that can be served on its own or in bread bowls.

Ingredients

Scale
  • 5 Tablespoons salted butter
  • 1/2 cup chopped yellow onion
  • 1/4 cup all-purpose flour
  • 1 3/4 cups chicken broth
  • 2 cups half and half
  • 3 cups broccoli florets, cut into bite-sized pieces
  • 1 cup julienned carrots
  • 1 teaspoon salt
  • 8 ounces cheddar cheese, mild or sharp, shredded (about 2 cups)

Instructions

  1. Cook the onions: Melt the butter in a large heavy-bottomed pot over medium heat.
  2. Add the onions and cook for about 4–5 minutes, until translucent and lightly golden brown around the edges.
  3. Make the roux: Stir in the flour. Continue stirring and cooking for about 4 minutes, until the roux turns the color of peanut butter.
  4. Make the soup: Slowly pour in the chicken broth and half and half while whisking constantly.
  5. Increase the heat to medium-high and bring the soup to a slow bubble. Once bubbling, reduce the heat to a simmer.
  6. Simmer the soup: Stir in the broccoli florets and carrots. Simmer for 15 minutes, stirring every 3–4 minutes.
  7. Finish the soup: Stir in the salt and shredded cheddar cheese until the cheese has melted.
  8. Taste and season with additional salt if needed. Serve warm.

Notes

  • Serve the soup on its own or in bread bowls.
  • Add the chicken broth and half and half slowly while whisking constantly.
  • Avoid heating the broth and half and half too quickly, as the half and half may curdle.
  • Use mild or sharp cheddar cheese, according to your preference.
